Easy Garlic Parmesan Chicken Bites
A budget-friendly family dinner for busy nights.
This is one of my favorite dinners for busy nights. Three chicken breasts feed our family of four, and I change up the sides depending on what we have and how much time I’ve got.
Ingredients
- 3 medium to large boneless, skinless chicken breasts
- A little cooking oil
- Garlic powder, salt, and pepper, to taste
- About 4 tablespoons butter, melted
- About ¼ cup finely grated Parmesan from a shaker can
- Additional garlic powder for the sauce, to taste
How I make it
- Cut the chicken into even, roughly 1-inch pieces. Toss with a little oil, garlic powder, salt, and pepper.
- Pan-fry: Heat a skillet over medium-high heat. Cook the chicken in a single layer, turning the pieces to brown several sides. Work in batches if needed.
- Or bake: Spread the chicken in a single layer on a baking sheet. Bake at 400°F for about 18–22 minutes, or at 425°F for about 15–18 minutes for more browning. Start checking early.
- With either method, check that the centers of the largest pieces reach 165°F (74°C) with an instant-read thermometer.
- Stir the melted butter, garlic powder, and Parmesan together. Toss with the hot chicken and serve.
What I serve with it
When the garden is producing, I serve these with fresh veggies. Buttered noodles and roasted red potatoes are good sides, too. On sports nights, I grab a box of Rice-A-Roni and call dinner done.
